Damn Good Cheese Grit Casserole

21⁄4 cups whole milk
11⁄4 cups water
1 c quick cooking grits
8 oz Velveeta cheese, cubed
8 oz sharp cheddar cheese, grated
1⁄2 stick butter
2 eggs, beaten
Heat oven to 350.
Butter a 13 x 9 baking dish.

 

Instructions

Mix milk and water in a large saucepan and boil. Slowly add grits, stirring well and cook
until thick, about 5 minutes.
Stir in cheeses and butter until all is well blended. Remove from heat and let cool about
15 minutes. Stir in beaten eggs. Pour into baking dish.
Bake about 45 minutes.
